The peeler exploits a moisture gradient built upstream: the surface humidified to 5–6% so the testa lets go, the core still at 3–4% so the kernel stays firm. Soft rollers rub the loosened skin free and compressed air lifts it clear.
Peeling performance is decided before the kernel reaches the peeler. Past the 2–4 hour window the gradient equalises and no machine recovers it — which is why the peeler is also the stage that sizes the compressor: 30–100 HP by head count.
